Banana Nut Bread
3/4 c or 1 1/2 sticks of butter or margarine, softened to room temp
1 1/2c buttermilk
1 tsp salt
1 1/2 tsp baking soda
1 tsp baking powder
4 medium or 3 large bananas 1c or 4oz chopped walnuts or pecans
Cream together butter and sugar until light and fluffy then add the eggs. Sift together dry ingredients. Add flour mixture and buttermilk alternating between the two. Mix in bananas and nuts. Divide between 2 greased loaf pans and bake at 350 for 45-55 minutes rotating halfway through. Test doneness with a toothpick to see if it comes out clean
I definitely have made this several times. Great staple recipe and works well as muffins too. I have also made this with coconut sugar and it came out just as delicious.
