Requested by my mother (also a Kathryn) who gives it her approval. Made WITHOUT the coconut. The insider info has told me that my grandma did not care for coconut so we left it out.
This “salad” tastes like a fruit mousse ,it’s very sweet and the marshmallows are unexpected yet delightful. I haven’t tried it yet but I think some crumbled graham crackers would be a nice addition on top for some crunch
-1 can Comstock cherry pie filling
-1 c. mini marshmallows
-1 can crushed pineapple, drained
-1 can sweetened condensed milk
-1 c. angel flake coconut (optional)
-1 large (16oz) cool whip
Combine the first five ingredients and then fold in the cool whip. Refrigerate.
I ended up eating this “salad” with graham crackers as a dessert type dip and it did not disappoint.
