Turns out I’ve been unknowingly making this pie for years. I’ve done my light research and this is 100% the recipe on the Libby’s can of pumpkin. But tbh if it ain’t broke don’t fix it. This pie is as tasty as it always has been and making it with the instructions hand written makes it even more enjoyable.
I did roast a pumpkin which wasn’t difficult but it’s unnecessary unless you’re like me and got swept up in the farmers market fantasy of fresh pumpkin. The fresh pumpkin had some caramelized bits which is giving the pie a deeper tone.
Famous Pumpkin Pie
Ingredients
2 eggs slightly beaten
1 3/4c pumpkin (1 can)
3/4 c sugar
1/2t salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 1/2c evaporated milk (12oz)
1 unbaked pie crust
Instructions
Combine all filling ingredients, mix well. Pour into unbaked crust and bake at 425 for 15 minutes then lower the heat to 350 and bake 40-50 minutes or until a knife comes out clean. Let cool completely and enjoy!
