I burnt this the first time. My oven runs hot and I should’ve known better but whatever you win some, you lose some. I made it again but I lowered the oven temp and it turned out great.
I think this would even be great if you wanted to remix it a little and added more nuts in place of some popcorn, threw on some chocolate chips the last 5 minutes in the oven and then stirred it around to get the chocolate coating the mixture
Caramel Popcorn
Ingredients
3-4 quarts of plain popcorn, about 12-16 cups
1/2c Chopped pecans
Mix together in a greased bowl
1/2c butter or margarine
1c packed brown sugar
1/4c corn syrup
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp vanilla
Instructions
Melt butter on low. Add in brown sugar and corn syrup. Bring to a boil over medium heat and boil for 5 minutes. DO NOT STIR WHILE ITS BOILING.
After the 5 minutes is over remove from heat and add in salt, baking soda and vanilla. Pour over popcorn and stir until mixed. Put mixture on two parchment or foil lined baking sheets. Bake at 250 for 30 minutes stirring mixture halfway.
Let cool completely and enjoy
