Ever So Easy Fruitcake

I get why fruitcake has a bad rap. I made this two times, once with those nuclear red cherries and “holiday” branded candied pineapple. It was not good. I did however redeem myself by using dried cherries and the tasty dried sweetened pineapple I love from my grocery store. Needed less to say the second time around was totally delicious and worthy of gifting.

Ever So Easy Fruitcake

2 1/2c flour
1 tsp baking soda
2 eggs
1-28oz none such mincemeat
14oz sweetened condensed milk
1c candied pineapple
1c candied cherries
1c nuts

Combine flour and baking soda in a small bowl. In a separate bowl combine eggs, mincemeat and condensed milk. Combine in the dry ingredients then gently mix in the pineapple, cherries and nuts. Pour into greased pans and bake at 300 for 1 hour to 1 hour and 25 minutes
