I was worried about the lack of eggs in this recipe but they turned out totally delicious. The ones in the photo are plain but we ended up drizzling on some simple icing. I suggest rolling these out 3/8 to 1/4 of an inch thick depending on how you like your cookies. I also chilled the dough and added a little bit of extra water because it wasn’t coming together with just the 1/4 cup.
1/4c butter or margarine
1/2c brown sugar
3 1/2c of flour
1 tsp baking soda
1 tsp ginger
Cream together butter and brown sugar. Add in molasses. Whisk together dry ingredients in a separate bowl. Add in the dry ingredients alternating with the water until a dough comes together.
Refrigerate 30 minutes the. Roll out and bake at 350 for 8 minutes
