Kathryn didn’t like coconut so I’m guessing she loved someone enough to have this recipe and make it for them.
Look. Listen. I used coconut milk and if you know what’s good for you, you will too. ALSO, This recipe calls for a meringue topping but there’s actually no meringue recipe. So I had to google “meringue pie topping” last minute and it worked out
Coconut Cream Pie
Ingredients
3/4c sugar
1/3c flour
1/4 tsp salt
2c milk
3 egg yolks lightly beaten
2 tbsp. butter
1 tsp vanilla
1- 9 inch baked pie crust
1 1/3c sweetened coconut
Instructions
Combine sugar, flour and salt in a sauce pan. Gradually add milk. Cook and stir over medium heat until bubbly and let simmer for two minutes. Remove from heat. Whisk in about half a cup of mixture into egg yolks. Return mixture to heat and cook another two minutes stirring constantly. Remove from heat and add butter and vanilla. Stir in 1 cup coconut. Pour into prepared pie crust. Top with meringue that you googled how to make making sure to top with 1/3c coconut before baking to toast the meringue

After we finished the pie in the photo I actually made a second pie since we couldn’t get over how good it was 🙂
