I didn’t use the frosting recipe for this, it didn’t work for me so I used the frosting from a coconut cake recipe I found online. Also, on the cake batter recipe there was no oil listed so I trusted the recipe and left it out but ended up making another cake with oil and it was much better. I would definitely make this again, I really enjoy cake recipes that involve box cake mix because it’s easy but redesigns something I usually keep on hand
Coconut Cake
Ingredients
1 White cake mix
2eggs
1 1/3c water
1/3c oil
1 package of coconut cream pudding mix
1tsp Coconut Extract
1/2 tsp Almond Extract
Instructions
Mix all ingredients together, divide between to 8 or 9 inch cake pans and bake according to instructions on the cake box. Let cakes cool completely and cut each layer crosswise to have 4 cake layers total.
Frosting
1c Sugar
1c powdered sugar
1c sour cream
24oz flaked coconut
Combine sugar, powdered sugar, sour cream and whip together until no longer grainy, could take 10-15 minutes. Frost the cake and coat with coconut flakes
Here is a link the frosting I used because I had trouble with the original https://sugarspunrun.com/old-fashioned-coconut-cake/
When I have time to try again and re-work the frosting I will update this with my own recipe. If you try this and the frosting turns out excellent please comment and let me know.
