Whoops, I forgot to add the cream to the cake topping but oh well it was still tasty.
If you wanna pretend like this is baked oatmeal and eat it for breakfast go for it, I won’t tell anyone. This is a tasty oatmeal spice cake with a crumbly, lightly crunchy topping. This cake got rave reviews from my sister in law so I will definitely be making it again
Oatmeal Cake
Ingredients
Cake
1 1/4c boiling water
1c oats, quick or old fashioned
1/2c shortening
1c white sugar
1c brown sugar
2 eggs
1tsp vanilla
1 1/2c flour
1tsp cinnamon
1tsp nutmeg
1/2tsp salt
1 tsp baking soda
Topping
6tbs butter or margarine, melted
2/3c brown sugar
1c chopped nuts
1c shredded coconut
1/4c cream
1tsp vanilla
Instructions
Pour boiling water over oats and let stand 20 minutes. Sift together dry ingredients and set aside. In a large bowl cream together shortening and sugars. Add in vanilla and eggs one at a time till well combined. Blend in the oatmeal mixture to the wet mix and fold in the dry ingredients. Bake in a 13 x 9 pan at 350 for 30 to 40 minutes.
For the topping, mix all remaining ingredients together and pour over hot cake. Broil for two minutes.
