Caramel Bubble Loaf

This recipe was all bubble and no caramel. The mixture sank to the bottom leaving the top 2/3 without caramel. If I were to attempt this again I would definitely make smaller dough balls and go the direction of money bread and roll them in cinnamon sugar before placing in the pan or doubling the caramel and pouring half before rising and half after rising. Other than that if you want a tear and share dinner roll bread this would be fun, minus the syrup.


Caramel Bubble Loaf

Dough
1 packet of yeast
1/4c lukewarm water
1/2c milk
1/4c sugar
1tsp salt
2tbs shortening
1 egg
3c flour
1/2tsp lemon zest(optional)

Caramel Glaze
1/4c dark corn syrup
1tbs melted butter
1/2 tsp vanilla extract

Instructions
Sprinkle yeast over water and let sit. Scald the milk and cool to lukewarm. Add the sugar, salt, shortening to the milk. Add 1 cup of flour, yeast, egg and lemon zest if using. Mix thoroughly. Add the rest of the flour and knead until smooth. Place dough in an oiled bowl, cover and let rise until doubled (about 1 1/2 hours). Punch down and let rest 10 minutes before forming into walnut sized balls. In a greased loaf pan place 1 layer of dough balls 1/2 inch apart on the bottom. Arrange the second layer placing dough balls over the spaces of the 1st layer. Repeat this pattern till all the dough is used. Mix together glaze ingredients and pour over. Let rise until doubled, around 45 minutes. Bake at 350, 30-45 minutes. Let rest 5 minutes in the pan.
