Egg Nog Chiffon Pie

Since I’ve never actually tried egg nog. I bought some to taste and it turns out it’s not for me therefore this pie isn’t for me. I get that if you want to serve this to kids you may not want them to get wavy off some pie but if you want the flavor of rum just put some rum instead of rum extract. That being said, if you like egg nog you will likely enjoy this pie. I will say that the texture is pretty wonderful and I would be open to finessing this to my taste in the future.


Egg Nog Chiffon Pie

Ingredients
1 pre-baked pie crust
1 envelope unflavored gelatin
1/4c cold water
1c cream, whipped
1/2c + 6tbs sugar, divided
3 egg yolks
1 1/4c milk
1/2 tsp salt
3 egg whites
1/4 tsp cream of tartar or white vinegar
2 tsp rum extract or 1 tbsp. rum

Instructions
Mix the gelatin and water in a small bowl and set aside. In a pot mix together 1/2c sugar, salt and milk. Cook the milk mixture over low heat until scalded, remove from heat and slowly whisk 1/2 of the mixture into the egg yolks. Add the egg yolk mixture back into the pot and cook over low heat stirring until it boils. Cool for five minutes then whisk in gelatin. When cooled and partially set up, whisk the mixture until smooth then add rum flavoring and fold in the whipped cream. Beat the egg whites until foamy then add in cream of tartar and slowly beat in the sugar and whip until stiff peaks. Fold egg whites into cooled cream mixture and pour into the pie crust. Sprinkle with nutmeg and chill until set (about two hours)
