Happy New Year everyone! If your family is like my family you bought a ham and had to freeze most of it because you have way too much. This recipe is a good way to use some of that ham that isn’t a sandwich. The only issue I had was that it uses too much broth, my end recipe had excess moisture so next time I would add 16oz broth instead of 20oz.
End of the ham
1 onion, chopped
1 green pepper, chopped
1-2c chopped ham
1c uncooked rice
16oz broth or water with bouillon
Sauté onion and pepper over medium heat till softened. Add in the ham and rice, sauté 2 minutes. Add in broth, bring to boil then reduce temp to low and simmer covered for 20 minutes.
