Lemon Delight. Not as delightful and I expected. I didn’t enjoy this because as it turns out I don’t like instant lemon pudding. Since the only thing lemon about this recipe is the pudding mix I could see this working with other types of pudding flavors. If I were to re do this recipe I would substitute the pudding for lemon curd which I think would really set it off.
Lemon Delight
1st layer(bottom)
1 stick of butter or margarine, softened
1c flour
1/4c sugar
1/2c chopped pecans
Cream together butter and sugar. Add in flour and pecans. Press into a greased 9×13 pan and bake at 350 for 25 minutes.
Let crust cool completely before moving on to the other layers
2nd layer
8oz cream cheese, softened
1c powdered sugar
1c cool whip
Beat together cream cheese and powdered sugar. Add in cool whip then spread over the crust layer.
3rd layer
2 packages lemon Instant pudding
3c milk
Whisk together and pour over cream cheese layer before it fully thickens
Refrigerate till set then top with remaining cool whip and chopped pecans
