This is like a soft cornbread you eat with a utensil. Spoon bread definitely is a blank canvas so if you’re not impressed by its simplicity by all means add some cheese, jalapeños or even some fresh herbs. I would definitely serve this at a family dinner or a holiday
Spoon Bread
Ingredients
1 scant cup of cornmeal
3c milk
3 eggs
1 tsp salt
1/2 tbsp. butter
3 tsp baking powder
Instructions
Cook cornmeal, salt and 2c milk over medium heat until it turns into a thick mush, about 5 minutes. Remove from heat and in the bowl of a stand mixer or using a hand mixer beat together with the rest of the ingredients until smooth. Bake at 350 for 1 hour in a buttered dish
