This was a request from a family member and I’ve only partially fulfilled it since the current times keep us from being together and enjoying a meal. The only thing this recipe didn’t have was peas so I added them on request of my mother. Also this casserole has rum in it which I didn’t have therefore I left it out so, definitely rum optional
Tuna Casserole
Ingredients
16oz egg noodles
1 clove of garlic
1c medium white sauce(recipe I used below)
1 can tuna
1/2tsp salt
1 green bell pepper, diced
2 tbsp. butter
1 small can of mushrooms
2tbs rum (optional)
Pepper
3/4c grated cheese
1/4c breadcrumbs
Medium White Sauce
2tbs butter
2tbs flour
1/2 tsp salt
1c milk
Instructions
Prepare white sauce by melting butter over low heat in sauce pan. Whisk in flour and salt over low heat, stirring constantly, until mixture is smooth and bubbly. Allow to cook for at least 1 minute to eliminate raw flour flavor. SLOWLY add milk, whisking constantly. Turn to medium heat, and keep whisking till thickened. Set aside.
Cook noodles in water with the garlic till just done, they will cook more in the oven so I boiled mine for about 5/6 minutes. Drain and rinse. Reserve 1/4c cheese and the breadcrumbs. Put noodles back into the pot and add the rest of the ingredients. Mix well. Turn into buttered casserole dish. Sprinkle with remaining breadcrumbs and cheese. Bake at 400 for 20-30 minutes. Garnish wish parsley and serve
