

I’ve always thought it was interesting that if you add citrus juice to condensed milk it immediately starts to thicken. The cherry cream cheese pie had the same concept although it did have the added cream cheese to thicken it up without having to bake it. I would for sure make this for a crowd, a neighbor, a friend. The lemon flavor is very pronounced and the crumbly oatmeal crust/ topping adds the right texture. Definitely worth a try especially if you love lemon desserts.
Lemon Crumb Squares
Ingredients
1 (15oz.) can sweetened condensed milk
1/2 cup lemon juice
1 tsp lemon zest
1 1/2c all purpose flour
1 tsp baking powder
1/2 tsp salt
2/3c butter or margarine, room temperature
1c brown sugar
1c uncooked firmly packed oatmeal
Instructions
Whisk together condensed milk, lemon juice and zest. In a separate bowl cream together butter and sugar until light and fluffy. Add in flour, baking powder, salt and oatmeal and mix until crumbly. Spread a little over half of the mixture on the bottom of a greased or lined 9×13 pan and press down evenly. Pour over the milk mixture and top with the remaining crumble mixture. Bake at 350F until brown around the edges, about 25 minutes. Cool in pan to room temp then chill in pan until firm before cutting. Enjoy!
