
This is a holiday recipe. A recipe that you make to give away as a gift. I mainly made this because you don’t need an oven and I don’t have use of one at the moment. I did enjoy making this recipe, there was a little bit of trial and error because I feel like my candy thermometer is telling lies but it worked out the second time. My technique for putting the pecans on was very fly by the seat of my pants so do your best if you try this. There is another “pecan roll” recipe in the box but that is actually for a sweet yeasted pastry akin to a cinnamon roll which I’m looking forward to making in the future.

Pecan Rolls (Candy)
Ingredients
1c sugar
1c packed brown sugar
2/3c milk
2 Tbsp. corn syrup
1/4tsp salt
2 Tbsp. Butter or Margarine
1 tsp vanilla
1c finely ground/chopped pecans
Instructions
Pour your pecans onto a plate or a small tray and set aside, this will make it easier later. In a medium size saucepan combine the sugar, brown sugar, milk, corn syrup and salt. Cook over medium heat until 235F or soft ball stage on your candy thermometer, stirring occasionally. Remove from heat and add the butter. Let mixture cool to 120F then add the vanilla and stir until thick. Divide into 3-4 logs about 1 inch thick. Roll the logs in the pecans and press in the pecans. Wrap the logs in wax/parchment and refrigerate till ready to eat.
