
Who knew Wheaties were good? These cookies were a surprise winner, I had no doubts they would be good but I didn’t expect my mother to say that these are her new favorite cookies. I would definitely recommend trying these out if you’re curious. These cookies have a great chewiness but not in the sense that your jaw is going to be paying the price.

Cereal Cookies
Ingredients
1c shortening or half butter and half shortening
1c white sugar
1c brown sugar, packed
3 eggs
1tsp vanilla extract
2c flour
1/2tsp baking powder
1/2tsp salt
1 tsp baking soda
2c oatmeal
2c Wheaties cereal
1c coconut
1c nuts, roughly chopped
Instructions
Whisk or sift together the flour, baking powder, salt, and baking soda, set aside. In a large bowl cream together the shortening, brown sugar, and white sugar till light and fluffy then incorporate the eggs and vanilla. Slowly add in the flour mixture until almost fully combined. Add in the oatmeal, Wheaties, coconut, and nuts until fully mixed together. With a cookie scoop or two spoons, portion onto lined or greased baking sheets and Bake at 375F for 12-14 minutes. The cookie dough can be made ahead of time, I pre-scooped the batter into portions and left them in the fridge until I was ready to bake.
