When I was in 3rd grade I got entered into a spelling bee because I was the only one in my class able to spell macaroni. Little did they know that I was doing the process of elimination in my head as they went around the class and I ended up landing on the correct spelling. Let’s just say that the spelling bee was not my moment to shine. I was out by the 3rd round and my time in the spotlight was over.
This macaroni salad deserves its moment on your table, it is unexpectedly delicious. Perfect use for that leftover holiday ham you have in your freezer or to bring to a barbecue in spring. I will surely reach for this recipe in the future and hope all who try it enjoy it.
8oz macaroni noodles
French dressing, preferably the kind that is not creamy
1 1/2c chopped celery
1/4c chopped green pepper
1 tbsp minced onion
1c finely diced ham
salt and pepper to taste
Cook the macaroni according to the package instructions. Rinse with cold water and let drain for a few minutes. Add the macaroni to a bowl and slowly add in the french dressing just until well coated but not soupy, about 1/2 cup. Refrigerate until fully chilled. Once chilled add in the rest of the ingredients, mix well, and put back into the fridge for at least 1 hour before serving.
