

I don’t know what I thought green bean schnitzel would be but this is not it. The main thing that threw me off was the full cup of sugar that made me feel like I was candying the green beans. Honestly, I didn’t love this recipe but I also didn’t hate it. On the other hand, my mother LOVED it, so if I make this again, it will be specifically for her. Maybe I could try reducing the amount of sugar in the future, but I think I will leave it for now.

Green Bean Schnitzel
Ingredients
3 cans of green beans, drained
4 slices of bacon, chopped
1 medium onion, chopped
1/2c vinegar
1c sugar
Instructions
In a medium-sized pot with a lid fry the bacon over medium heat until just starting to crisp. Then add the onions and cook until translucent. Add in all of the other ingredients and bring to a boil then reduce heat to low and simmer for 1 hour. Remove from heat and serve.
