Cocktail Sausage Casserole

I didn’t know what to expect when putting this casserole together but I can say that I will be making this in the future. Everyone who tried this recipe gave me rave reviews and even asked for the recipe. The topping in the photos is not a part of the original recipe but makes the dish look impressive with low effort.


Cocktail Sausage Casserole

Ingredients
2lbs of shredded frozen hashbrowns (my bag was 30oz)
1c minced shallots
1c cream of chicken*
1c cream of celery *
1, 14oz package of cocktail sausages
1 pt sour cream

Instructions
Mix all the ingredients together and pour them into a greased baking dish. Bake at 350F for 50-60 minutes. **

*Sub any “cream of” soup
** For the topping in the photos just cut up some extra cocktail sausages and cook in a pan with some oil over medium heat till brown and crispy. Drain on paper towels and sprinkle over your casserole along with some chopped parsley
