Peanut-Jelly bars

Peanut-jelly bar recipe paper

Is this a recipe card? No, but there are a few of these saved recipes from products or newspapers like this one.
If you’re nut-free just omit the peanuts. They add some flavor but not enough for me to press you to use them. Also, I think these would be so good with strawberry jam and a little bit more of it than stated. Overall these were so easy and I would make them again.

Peanut-Jelly Bars

Ingredients
1 1/2c flour
1 tsp salt
1 tsp baking soda
3/4c (1 1/2 sticks) Butter or margarine
1c brown sugar
1 1/2c old-fashioned oats
1/2c chopped peanuts ( sub oats if not using)
10oz of Jam or Jelly of your choice

Instructions
Line or grease a 13×9 pan and preheat the oven to 400F. In a small bowl whisk together flour, salt, and baking soda. Set aside. In the bowl of your stand mixer or in a mixing bowl with a hand mixer cream together your sugar and butter. Add in your flour mixture, oats, and peanuts, and mix until just combined. Press Half of your dough on the bottom of your pan, it will seem too thin but it’s fine. Spread your Jam on top of the bottom crust then sprinkle the remaining mixture on top. Bake for 25 minutes. Let cool in the pan for at least 10 minutes before transferring it to a cooling rack.
