
This “pie” is along the lines of a baked custard. There’s no need for a crust because the filling gets brown on the bottom helping it easily come out of the pan. If you want more of a coconut flavor feel free to add in some coconut extract or even sprinkle some in some cinnamon. Not sure I will reach for this pie in the future but if you enjoy baked custards I suggest giving it a go.

Coconut Pie
Ingredients
4 eggs
1/2c flour
1tsp vanilla
2c milk
4tbsp butter, melted and cooled
1c sugar
1c shredded coconut
Instructions
Mix everything together until thoroughly combined and pour into a greased pie pan. Bake at 350 for 45min. Pie will still be slightly wobbly and set as it cools.
