Christmas Divinity

The Christmas divinity needs to be on 24 hour surveillance. This isn’t my favorite of the dishes so far but it turns out my mom has a long standing history with lack of trust around the divinity.

This tastes like a marshmallow and a meringue had a love child and it was also cherry flavored.
PS: This is really easy but can also be really messy

Christmas Divinity

3c Sugar
3/4c corn syrup
3/4c water
2 egg whites
1 package of flavored gelatin, red color
1c nuts

Beat egg whites until frothy then add the gelatin and keep beating until stiff peaks. Mix together sugar, corn syrup and water in saucepan. Then bring to a simmer over medium heat and cook until hard ball stage about 260 degrees No stirring. .
Stream in sugar syrup while beating the egg whites (I have a stand mixer , if you use a hand mixer I suggest getting an assistant for this part) Add the nuts and start either spooning or using a cookie scoop sprayed with cooking spray to scoop the divinity onto wax paper lined cookie sheets. Let set for a few hours or overnight and enjoy. Store in an airtight container.

1/17/2021 Update

I have not made this since 2019 however I do plan to try this recipe with plain gelatin and vanilla extract. I want to try a more vanilla flavor instead of a fruity gelatin since last time I tried it I did enjoy the texture but the cherry flavor threw me off. Will definitely update this when I have the chance to give it a go.
