
Everyone who tried this salad really enjoyed it. It’s extremely easy and tastes like a delicious tuna salad with the added texture of the rice. If you wanted to make this a meal I suggest serving this on top of some arugula or whatever salad greens are your favorite. Definitely would make this for people or even bring it to a barbecue or potluck.
Festive Tuna Rice Salad
Ingredients
3 cups cooked long grain rice
7 oz. canned tuna
3 hard boiled eggs, peeled and chopped
2 Tbsp. sweet pickle relish
1 1/2 tsp chives, minced
1/2c mayo
1 tsp. mustard
1/2c chopped celery
1 large red bell pepper, chopped
1/2 tsp fresh lemon juice
Salt, pepper and paprika
Instructions
Combine rice, tuna, eggs, relish, chives, celery and bell pepper. In a small bowl mix together mayo, mustard, lemon juice, salt and pepper. Pour over rice mixture and toss. Chill thoroughly. Serve sprinkled with paprika.
