
These are classic peanut butter cookies. We enjoyed these cookies and my mother said they were even better the next day. You can refrigerate the dough or even freeze dough balls for later and just add an extra minute or 2 to the baking time.

Peanut butter cookies
Ingredients
1c butter or margarine softened
1c white sugar
1c brown sugar, packed
2 eggs
1c peanut butter
1 tsp vanilla
1 1/2tsp baking soda
1 tsp baking powder
2 1/2c flour
1/2 tsp salt
Instructions
Cream together the butter and sugars with a hand mixer or stand mixer. Once light and fluffy add in your eggs, once thoroughly combined add in the peanut butter and vanilla. Whisk together the remaining ingredients and add them to the wet mix. Incorporate until just combined. Roll into one-inch balls and space them out on a prepared baking sheet. Slightly flatten the balls with your hand or make a criss-cross shape with a fork. Bake at 350F for 10-12 minutes.
